Cooking ingredients are left to dry in the sun creating brightly coloured rows of red, yellow, and green. Semolina, which is used as the base for dried foods like couscous, is mixed with food colouring and then pressed into sheets before it is dried outside.

The food normally takes around three days to dry with workers turning the sheets or tossing the grains to ensure all the moisture is dried out by the sun. Photographer Nguyen Dinh Ri visited a traditional handicraft village...
