Workers are amongst rows of circular frames as they organise tapioca flour to be dried out in the sun. The photos of them at work amongst the racks were taken by Do Tuan Ngoc in Tay Ninh, Vietnam. <br />

He said, “This traditional craft village specialises in making tapioca powder and is passed down the generations here. It is an indispensable ingredient in most types of Vietnamese sweet soups."<br />

"Coloured dye is sometimes added to the flour, especially when it is used in sweet soups, with colours like green, yellow, and red.  This process has become a unique part of the culinary culture in Vietnam”<br />
